Two cups of mixed greens, zucchini cucumbers, lettuce, spinach, celery, broccoli.
1 TBS extra virgin of olive oil
2 cups homemade chicken or vegetable stock (or filtered water)
1 cup coconut milk no additives
Freshly grated nutmeg
Celtic sea salt
Heat olive oil in pan and cook vegetables on medium heat. Add stock and coconut milk. Remove from heat and blend. Add the nutmeg and the black pepper and blend.
Health tip: Dark leafy greens are one of the best sources of iron, calcium, potassium and magnesium. This is an easy and yummy way to sneak them in!
