Ingredients
handful of baby spinach or rocket
half a baby cucumber
half a capsicum or I used paprika it has that extra sweetness
Persian Feta or other soft feta
8 slices of salami*
Squeeze of Lemon
Parmesan Olive Oil (I used Olio Bello), or any good olive oil
Method:
Heat a small fry pan and when hot throw in the salami slices with a dash of lemon juice. (This doesn`t need any oil as the sausage has enough fat) Fry for a couple of minutes.
Whilst this is happening chop your capsicum and cucumber up and put in a bowl with spinach and toss with a little Parmesan Olive Oil.
Remove the Sausage from the pan and put on some kitchen towel to soak up residual fat. Put the sausage and a few generous clumps (this is the best way I can describe it) to the spinach salad. Toss to mix, the Persian feta has a lovely way of coating the leaves, capsicum and cucumber to give it a bit of a `dressing`.
Present on your plate or lunchbox as desired.
