Meatballs in Saffron Rice

500g beef mince

1/3 cup (65g) basmati rice, well washed, rinsed, drained

2 garlic cloves, crushed

¼ tspn ground cinnamon

¼ tspn ground cumin

1 onion, very finely chopped

1 tblspn olive oil

½ tspn ground chilli

½ tspn saffron threads

2 tblspns chopped parsley

1 lemon, juiced

quinoa and lemon wedges, to serve


Combine mince, rice, garlic, cinnamon and cumin. Season. With wet hands, shape mixture into small meatballs. Chill for 10 minutes.

Place onion, oil, chilli, saffron and 5 cups water in a saucepan. Season, bring to boil and add meatballs. Cover, simmer on low for 30 minutes. Stir in parsley and lemon juice. Serve with quinoa and lemon wedges
