Chicken Skewers with Satay Sauce

Chicken Skewers

Ingredients

500g chicken breast fillet, cut into 3cm cubes
1 teaspoon turmeric powder
Olive oil, for frying
Few drops sesame oil
1 teaspoon sesame seeds
 

Method

1. Thread the chicken pieces onto the skewers

2. Sprinkle the turmeric powder evenly over the chicken skewers

3. Heat a little olive oil in a grill pan

4. Fry the skewers in the grill pan for 3-4 minutes each side, pouring a couple of drops of sesame oil ever each skewer which cooking.

5. During the last couple of minutes of cooking, scatter the sesame seeds over the skewers, so they toast just a little.

 

Satay Sauce

Ingredients

1 tablespoon olive oil

1 red chilli

1 garlic clove, crushed

1 teaspoon ground coriander seeds

1 1/2 teaspoon cumin

Juice of 1 lime

2.5 cm square of fresh ginger, grated

1 teaspoon brown sugar

3 tablespoons peanut butter (no added salt variety)

170ml water

Method

1. Heat the olive oil to medium heat and add the chilli and garlic. Fry for 1 minute
2. Add the coriander and cumin, fry for 30 seconds
3. Add the lime juice, ginger, brown sugar, peanut butter and water
4. Simmer for 2-3 minutes, and serve with the skewers
